Bordeaux is often synonymous with French wine, due in great part to the vast quantity of wine produced here, both red and white. While the quality of the wines runs along the entire spectrum, the top-tier châteaux make some of the most collectible, ageworthy, and famously expensive wines in the world. Five red varietals are permitted to be grown — Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec, and Petit Verdot. The red wines are unofficially grouped first according to their origins on either side of the broad Gironde estuary that splits the region.

Châteaux in Medoc on the west side, or "Left Bank", of the estuary grow primarily Cabernet Sauvignon, with the communes of Saint-Julien, Saint-Estephe, Paulliac, and Margaux serving as standard bearers of quality. Further south, the gravelly soils of the aptly-named Graves and its sub-AOC Pessac-Léognan produce stern, structured Cabernet Sauvignon wines. Official quality designation in the Medoc came with the historic 1855 Classification, which grouped estates into one of five "growths" or quality categories. To this day, the five "First Growth" châteaux — Latour, Lafite-Rothschild, Mouton-Rothschild, Margaux, and Haut-Brion from the Graves remain the most famous names in the wine world. The eastern "Right Bank" of the Gironde is classic Merlot country, where the chalky, limestone soils allow the grape to thrive. Cabernet Franc forms the remainder of most wines, with the châteaux of Saint-Emilion and Pomerol representing the finest examples.

White Bordeaux wines are made from either Sauvignon Blanc or Sémillon, or a combination of the two varietals. These are typically full-bodied wines, yet they retain a bracing acidic structure that allows them to age exceptionally well for white wines.
