[ Siete Misterios Doba-Yej is made from agave Espadin. Doba-Yej is Zapotec for agave Espadin, and they chose this name as this mezcal is different from the Siete Misterios Espadin. It is the first expression that is made in a copper still rather than the clay pot still seen in their other mezcals. The milling for this mezcal is also done by horse-drawn tahona, rather than by hand. [ This limited batch of mezcal was made in collaboration with Proyecto Humo by master mezcalero, Don Fortino Ramos Florean, on the edge of San Pablo Huixtepec, Oaxaca. Fortino cultivated Espadín and wild Tobalá agave. Production is traditional: agave is cooked in earthen ovens, Tahona-ground, fermented in open-top wood barrels, with ambient native yeasts, and double- distilled in a copper alembic still.
