Clairin is a white distillate made from fermented sugar cane juice from the highlands of Haiti, produced by Fritz Vaval, the second generation of his family-owned distillery, the Arawaks Distillery, located in Cavaillon on the south side of the island. Vaval also owns fifty acres planted with varieties of Madame Meuze sugar cane, which is used exclusively in the production of this clairin. The rum is floral, herbaceous and saline with notes that really evoke the terroir and bring the land to life; on the palate it is sharp and focused and precise but also very easy to sip.
