His wines are so rare that I had never come across one before I managed to arrange a visit to the property. M. Billiot is a very unassuming and modest person, who was dressed in his worn jeans and knitted sweater throughout our visit. When you've just come from one of the major houses with their slim, Armani-clad, business-minded directors, it's wonderful to meet a real wine farmer in the true sense of the phrase... Billiot's greatness depends chiefly upon his hard work in the vineyard. Old vines and low yield is the recipe for success. Despite the high quality, Billiot's Champagnes are hardly for beginners, as malolactic fermentation has not been used. The concentration and richness that lies under the surface can be hard to appreciate in the wine's youth. All of his wines demand at least a further five years in the bottle to mature properly."
