Walla Walla's Amavi Cellars is the brainchild of Ray Goff, a refugee from the world of industrial beer (think Budweiser). Partner and winemaker Jean-Francois Pellet has worked everywhere from Heitz Cellars in Napa to Spain to his native Switzerland. Their efforts are largely Cabernet-centric, and quite successful at that, as this 2006 attests. Comprised of 76% Cabernet, 18% Merlot, 1% Cabernet Franc, and even 5% Syrah, from grapes grown at some of Walla Walla's premier vineyard sites (Pepper Bridge and Seven Hills, to name two), this is complex, nuanced, with layers of dark chocolate and subtle oak spice. Richly textured, soft and pliant, the tannins are sufficiently refined to deliver as early as, well, now!

: "[$60 list] A powerhouse blend of cabernet franc and merlot, from Ben and Gaye Smith's vineyard on Red Mountain (planted in 2004), this is precocious in its youth, with rich notes of plum, violet and star anise. It's all sweet heat on the palate, that rich plum meeting lavender and a dark, woodsy bottom note. Like most Red Mountain reds, this will need time; then decant and serve with skirt steak off the grill. 460 cases. (Oct 2009)"

It offers up an intriguing nose of earth, spice, sage, clove, cinnamon, black cherry, and black currant. Already revealing some complexity on the palate, it becomes a bit lean in the finish. Stephen Tanzer (International Wine Cellar): "(a blend of 48% Cabernet Sauvignon, 25% Cabernet Franc, 18% Merlot and 9% Petit Verdot) Bright red-ruby. Highly nuanced, claret-like aromas of redcurrant, blueberry, tobacco, leather, rose petal and licorice, along with a light leafy quality. Then sappy-sweet in the mouth, with nicely delineated, vibrant flavors of cherry and raspberry complicated by mineral and floral nuances. This mounts impressively toward the back and finishes floral and very long, with broad, fine-grained tannins. Classy juice! Ben Smith notes that the Ciel du Cheval vineyard does extremely well in the warmer years. 92 points."

Layered, with superb depth and grip, the wine is reminiscent of a top level Pauillac (Christian LeSommer worked for many years at Chateau Latour). The wine has enough structure to develop for another 4-6 years. The finish is long and fruit-filled. Drink it from 2012 to 2025. (Jun 2008)"
Available in limited quantities, the Edouard de Rollat (a blend of 75% Cabernet Sauvignon, 20% Merlot, and 5% Cabernet Franc) is the luxury cuvée from Chateau Rollat. Though terrific now, it’s more structured than the Sophie and really deserves at least a few years of cellaring. Tasted blind, this could easily pass for a top level Pauillac. Highly recommended.
