The Big Cheese. Paul had a brief stint in Minor League Baseball with the Chicago Cubs system before spending four years in the Marine Corps, serving one year in Vietnam. Upon completion of duty he went to work in the wholesale liquor and wine industry with Youngs Market for 12 years before entering the retail business in 1978. After founding the store that year, Paul became an integral part in the promotion of Napa Cabs during the early days of the California wine boom. Anointed the "King of California Cabernet" by the Wine Spectator, Paul is recognized nationally for his ability to ferret out top wines before the press makes them famous. His long-standing relationships with the top California producers allow for generous allocations on many of the most sought after wines.
