Producer notes: "From vines averaging 50 years of age. The grapes for this wine come from southeast facing plots at the foot of the chapel perched on the hill above the village of Fleurie. They are vinified in whole bunches. After vatting lasting 8 to 9 days comes pneumatic pressing, then maturing in vats for 6 months. A refined aromatic wine in a carmine robe, it opens out to aromas of very ripe black-skinned fruit. Food pairing: country-style pâté, poultry, squab, leg of lamb, fresh goat's cheese."

Producer notes: "This well-balanced wine has typical aromas of violet with an emphasis on fruit, and comes from nine different vineyards of the Gamay varietal, which are located throughout the Moulin a Vent appellation. The refinement and richness of this wine is revealed by a soft wine making technique, maceration under CO2 and a six-month aging process in wooden vats and barrels."

This wine is produced from Jean-Paul's oldest vines, which have fewer, smaller grapes with a more concentrated flavor. He is able to harvest the grapes later because there is far less risk of rot, owing to the small bunches. The grapes are very ripe and have a high natural sugar level. The wine is vinified in traditional Burgundy methods. Ancien is a deeply colored wine with a bouquet of red fruit and very soft tannins. It can be drunk relatively young but is probably best at 2 to 3 years old. This is a wine well balanced with natural sugar and acidity.

Producer notes: "From vines 25 to 60 years of age. Deep garnet in color, this wine offers a sustained, complex nose of stone fruit combined with mineral notes. The highly vibrant palate has a sound underlying structure which is powerful yet velvety, thanks to tannins which, despite mellowing, are still very perceptible. This is a stylish wine bearing the hallmarks of its terroir and will make fine drinking over the next two to five years. It goes nicely with meat in sauce, game, and cheese."
