This actually finished with a bit over two grams per liter residual sugar, said Chave, who added that it might well have turned out topheavy had he fermented with commercial yeasts (the less efficient wild yeasts tend to produce more glycerine and a bit less alcohol). 92 points John Gilman (View From the Cellar): "The 1997 Lebrun Servenay is a lovely bottle that tastes to me as if it has a significant percentage of the final blend that has been barrel fermented, but this may also simply be the characteristic of the ’97 vintage. The nose is deep and showing lovely secondary layers of complexity in its mélange of ripe apple, pear, wheat toast, lovely soil tones that are redolent of both chalkiness and wet stones, a bit of crème patissière and spring flowers. On the palate the wine is full-bodied, deep and focused, with a lively core of fruit, lovely framing acids, refined bubbles, and impressive length and grip on the complex, soil-driven finish. This is a classic example of the Côte de Blancs, and is most impressive for a 1997 vintage wine. I would opt for drinking this fine wine over the relative near-term, as it is in full bloom and drinking beautifully. 2007-2012+? (May/Jun 2007)"

Fleshy orchard fruit flavors are sharpened by zesty mineral bite, picking up a gentle honey quality with air. Intriguingly complex Champagne, combining supple white and yellow fruit character with firm minerality, and finishing with gentle grip and impressive length.
