100% Palomino. El Maestro Sierra was founded in 1830 by Jose Antonio Sierra, a master carpenter who was responsible for building barrels for all the major Sherry houses. Although the trade was dominated by the Spanish nobility, he established a small winery and over time was able to become one of the top Almacenistas of high quality Sherries. Aged in American oak barrels for 12 years, this dry, elegant sherry offers bold aromas and flavors of toasted almonds and sea salt with soft undertones of fruit and oak.

The Equipo Navazos La Bota de Fino #18 comes from one of the oldest bodegas in Jerez, Valdespino, which dates back to the 1400s but wasn't actually registered until 1875. This is a single vineyard Fino, from the Macharnudo Alto vineyard that is just north of Jerez and is widely regarded as one of the best in the area. Valdespino is also one of the few wineries that ferments the fino in the same barrels where it will start to age under flor. This bottling comes from several different butts that range from 8-1/2 to 10-1/2 years old, which is quite advanced for a fino. It was also bottled with almost no filtering, so the wine has more color and intensity than a typical fino. It will also continue to age well in bottle and pick up a more Amontillado note. Great acidity frames distinct nuttiness, toasted almonds, olives and an incredibly long finish. Drink this is in a regular wine glass as opposed to the traditional copita. Only 4,000 bottles produced.

The Equipo Navazos La Bota de Manzanilla Pasada #30 is a 15-butt solera of aged Manzanilla that was started in 1986. In order to keep this solera from becoming an Amontillado, it was gently babied with small additions of fresh wine to keep the flor active and the wine bright. It exhibits a strong saline character, superb richness and notes of olives, brine, and almonds. Drink this is in a regular wine glass as opposed to the traditional copita. Very limited; only 3,600 bottles were produced.

Pineau des Charentes is regional French aperitif, made in the départements of Charente and Charente-Maritime in western France. While popular in Charente, it is less well-known in other regions of France and somewhat uncommon abroad. It is a fortified wine made from a blend of lightly-fermented grape must and Cognac eau-de-vie. Grape varieties include Semillon, Colombard and Ugni blanc. Oak aged for 3 years. Serve chilled. Alcohol 17%.

Producer notes: "The tradition of Sangre y Trabajadero goes back to the 1910s. An old cooper whose shop was located in Puerto de Santa Maria's meat market put some of his barrels to personal use by making his own Oloroso. He would share his Oloroso with the butchers who were his neighbors and eventually named it in their honor: 'Blood and the Worker' or Sangre y Trabajadero. Tasting Notes: Nutty, rich aromas. The palate is almost sweet with nutty flavors and hints of the nearby ocean."
