This actually finished with a bit over two grams per liter residual sugar, said Chave, who added that it might well have turned out topheavy had he fermented with commercial yeasts (the less efficient wild yeasts tend to produce more glycerine and a bit less alcohol). The palate is sweet and shows lots of acidity to counter-balance the sweetness, in fact the acidity carries the wine through to the toffee-ish finish, with a little coffee and also caramel on the way. San Francisco Chronicle: "Cossart Gordon, arguably the oldest of the Madeira shippers and now another of the Madeira Wine Co. labels, is better known for its nonvintage wines, but this 1997 is full of briny tang -- more than you'd expect for the somewhat sweet Bual. Lots of iodine and hazelnut, papaya and burnt orange, with an intense acidity to enliven it. (12/19/10)"
Medium rich. Aged for 11 years in oak casks. Made from the grapes of a single year's harvest. The wine is aged in the traditional 'canteiro' system, whereby the oak casks are placed high up in the hot, dry lofts of the lodge and left for years to develop their charactiveric flavor and complexity.

92 points John Gilman (View From the Cellar): "The 1997 Lebrun Servenay is a lovely bottle that tastes to me as if it has a significant percentage of the final blend that has been barrel fermented, but this may also simply be the characteristic of the ’97 vintage. The nose is deep and showing lovely secondary layers of complexity in its mélange of ripe apple, pear, wheat toast, lovely soil tones that are redolent of both chalkiness and wet stones, a bit of crème patissière and spring flowers. On the palate the wine is full-bodied, deep and focused, with a lively core of fruit, lovely framing acids, refined bubbles, and impressive length and grip on the complex, soil-driven finish. This is a classic example of the Côte de Blancs, and is most impressive for a 1997 vintage wine. I would opt for drinking this fine wine over the relative near-term, as it is in full bloom and drinking beautifully. 2007-2012+? (May/Jun 2007)"

Superripe aromas remain just this side of surmaturite: black plum, black cherry, roast coffee, dark chocolate, menthol. (I might have picked this blind as ripe-year St. Julien.) Great lushness and depth on the palate; pliant, seamless and thoroughly ripe, but with strong supporting structure under the seductive flesh. Finishes with noble, broad tannins and great freshness; mint and licorice notes contribute to the impression of grip and snap. The crop level was 2.5 tons per acre, which Draper says was the highest ever at this estate, and the alcohol is 12.9%, on the high side for Monte Bello. Another outstanding vintage for this wine. We would expect it to be very good condition for the next five to eight years, but it will need to be tracked during that period to see how it shapes up for the longer haul and to see if it lives up to its three-decade structure.
