This 'single village' mezcal is aged for 14 years in glass bottles and then is finished in a Stags Leap Cabernet barrel for 43 days. The result is a light nut-brown color and offers beautiful aromas of raisin, vanilla and dark chocolate, with a mellow pepper note in the background. Sweet agave nectar and honey flavors finish with a muted peppery sting. (Dec 2010)"

Faustino Garcia Vasquez is the maker of Chichicapa. He is a humble and talented craftsmen with great respect for the ancient processes. Chichicapa has a relatively light nose, yet is deep and sweet on the tongue with a very complex character. It has a long finish, with a distinct smokiness and hint of mint at the end.

Producer notes: "Our handcrafted Absinthe Verte is prepared following the traditions of European master distillers of the 19th Century. We start with imported Chilean Pisco, placing it in our small 150 liter copper potstill, carefully adding the traditional Absinthe Verte herbs: Anise, Grande Wormwood, and Sweet Fennel, together with a number of proprietary botanicals. The herbs are gently distilled at a high alcoholic strength, capturing the essential aromas and oils that are in the very heart of our hand selected flowers and herbs. These herbs are grown and harvested in the fields of Spain, France, and Western Europe, and the unmistakable aromas of these peaceful European meadows are captured in every bottle of our Absinthe Verte. Before the Absinthe Verte is bottled, it must undergo a coloring step. Many commercial absinthes are colored artificially. Ours is colored in the most traditional manner by placing our hand selected coloring herbs (Hyssop, Melissa, and Roman Wormwood) in cheesecloth and steeping the blend in warmed Absinthe Verte. These coloring herbs strengthen the floral aromas and citrusy undertones of the finished Absinthe Verte. The high alcohol content of the Absinthe Verte leaches chlorophyll from the plant material, turning it a wholly natural, vibrant green color that is similar to the gemstone Peridot. This unique hue is one of the reasons that French Impressionists of the Belle Époque took so strongly to traditionally prepared, handcrafted Absinthe Verte."

This whisky aroma comes flying out of the glass in the initial whiffs as the spirit engages the olfactory membranes immediately; following seven minutes of aeration, the aroma settles down enough to offer luscious notes of rye bread, oaky vanilla, and light toffee; and type of animated bouquet that I appreciate. Entry is firm, focused on the rye, gently sweet, and caramel-like; midpalate features broadstroke multiple layers of light caramel, cookie dough, brown sugar, oak resin, marshmallow, and honey. Ends on a resiny/sappy note that balances the grainy sweetness. For a first time whiskey effort, even if the master distiller is the gifted David Pickerell, formerly of Maker's Mark, this is a superb opening act, which will be hard to follow.
