Producer notes: "Named after our shop in St James’s, No.3 offers a taste of tradition; a classic style of London Dry Gin that originated in the 1830s as a refined alternative to the rather disreputable ‘sweet Gin’. Like those original London Dry Gins, No.3 has juniper at its heart. The formula is beautifully simple: three fruits (juniper, sweet Spanish orange peel and grapefruit peel) and three botanicals (angelica root, Moroccan coriander and cardamom), placed in a copper pot still and immersed in pure grain alcohol diluted with demineralised water. But it takes a master craftsman to perfect the distillation process, and in Dr David Clutton we had one of the world’s best. The result is Gin that’s bright, crisp and fresh on the nose, with juniper to the fore on the palate, supported by floral notes, warm spice and plenty of citrus zing, finishing with an earthy dryness. In short, the very embodiment of what a London Dry Gin should be."

In the inital nosings I detect obvious scents of black peppercorn and juniper, with the pepper eclipsing the juniper by a degree or two; further aeration time stimulates some of the other botanicals, most prominently cassia bark, lemon peel and coriander for an intriguing bouquet wherein I pick up a smidgen more juniper than in regular Sapphire. Entry is botanically pleasing, but a touch sweet and fruity ripe, and therefore fuller in texture than the too-ethereal-for-me regular Sapphire; midpalate features piny/cedary juniper and the Thai lemongrass, as the black pepper aspect diminishes. Finishes cleanly, with a late gas pedal jolt of juniper and licorice. A line extension that overshadows the original Sapphire. (Dec 2011)"

This Old Tom Gin is a historically accurate revival of the predominant Gin in fashion during the mid 1800's and the golden age of American cocktails. The recipe was developed in collaboration with historian, author, and mixologist extraordinaire David Wondrich. Old Tom is the Gin for mixing classic cocktails dating from the days before prohibition. Its subtle maltiness is the result of using a base wort of malted barley, combined with an infusion of botanicals in high proof corn spirits. The final distilation is run through an alambic pot still in order to preserve the maximum amount of aromatics, flavor and body. Only the ''heart of the hearts'' (the very best portion of distillate) is retained for this special bottling.
