Oh man, I could smell the lemon peels, dill, lavender, and dried herbs in the opening sniffs, but there's also a backgrounder of core fruit that's waxy and spiced; another seven minutes of air contact allows the waxiness to go all candle wax-like while the herbal thing detonates, coming off saline, floral, and peppery (jalapeño) all at the same time; like no gin I've ever sniffed. Entry is acutely peppery, off-dry, flowery (dried petals), and elegant; mid-palate is nicely floral, gently sweet/ripe, and moderately oily in texture. The flower petal presence is the silver thread that's present and accounted for throughout. I put this right up there with the best of the New World Style. (Mar 2011)"

Double Cross is produced in the Slovak Republic at a family-run distillery located in a 13th-century village in the foothhills of the Tatra Mountains. Double Cross starts with Tatra Mountain spring water drawn from 200-ft deep aquifers and 100% organic, estate-grown winter wheat. A seven-step distillation process allows for a stepwise 'waterfall-like' enhancement of the Double Cross distillate. Double Cross is filtered seven times using diamond-dust micro-filters, active charcoal and limestone.

After fermentation and pot still distillation, this cachaça is rested in steel tanks for over one year. This process takes the edge off and smoothens the flavor. Appearance: clear as water.
