Initial sniffs encounter generous, earthy/chalky aromas that are moderately sweet and spicy, almost akin to Christmas cake that includes nice things like dried fruit, ginger, brown sugar and cinnamon; following another seven minutes of air contact, the bouquet turns mildly grassy, caney, fruity and more intriguing as a result. Entry is plump, appealingly oily in texture and therefore substantial, and gently sweet; midpalate is multilayered, sweet but not overly so, and is keenly spicy, especially nut and vanilla. Concludes well on a measured note that elegantly combines sugar sweetness with acidity and oak. A worthy second generation (Mar 2012)"

Traditional distillation method on the lees (natural sediments resulting from the wine fermentation) allows the Cognac to develop richer aromatic notes. The Fussigny historic cellar located by the bank of the Charentes River, makes for perfect humidity and is ideal for revealing all the aromas of the Cognac. It also allows more alcohol than water to evaporate and creates a rounder, more subtle cognac. Ageing takes place in certified Limousin and Tronçais oak barrels.

Named after the 'angel’s share' (the portion of the spirit that evaporates during aging), Angel’s Envy was created by Lincoln Henderson, developer of Gentleman Jack and Woodford Reserve. His new project is aged 4-6 years, made up of 72% corn, 18% rye and 10% malt and is aged in air-dried Bluegrass Cooperage barrels and finished in ruby port barrels. It’s a very subtle bourbon, with a nose of vanilla and toasted nuts. A hint of maple in the flavor and a smooth finish that lasts.

The alluring aroma is floral, as in dried violets, in the initial passes, then it turns bean-like and pleasantly nutty after five minutes; additional aeration unearths nothing more in the bouquet's development. The palate entry is acutely astringent; at the midpalate point a flavor character of baked nuts comes on strongly in bitter tastes of oak and molasses. The aftertaste is long, desert dry, sugary, and sap-like. What I appreciated most about this grey-beard rum is its stateliness and its poise. Also considering its age, it was not overly woody as many very old rums happen to be; delicious in an old-guard style."
